Loaded chocolate chip oatmeal cookies

My favorite season is fall. That might have something to do with my birthday, but mostly it has to do with my allergies. Me, spring and pollen are not good friends. Not at all. Just thinking of pollen and I immediately start to sneeze and have runny eyes. Last week was the worst week ever! Nothing pleased me. The light and the softest sound would give me a terrible headache. There were no painkillers to help me. I tried them all, every 2-3 hours. Days and nights.

The only good thing about my week, except the good kisses and “doctor care” from my 4 year old, was a dozen of these chocolate chip oatmeal cookies hidden in the back of my freezer. They are like the ultimate oatmeal cookies. Chocolate chip, peanut butter, coconut and chopped pecans meet chewy oatmeal cookie.

These chocolate chip oatmeal cookies combine most of my favorites in one irresistible bite. You know I love chocolate and coconut together and loved adding coconut to these peanut butter cookies but have never thought combining all three of them. Oh my goosh!!! Where have I been until now?

It’s an explosion of flavors and a mixture of textures. Melting chocolate chips, creamy peanut butter, flavorful shredded coconut, crunchy pecans and chewy oats. Oh yes! These cookies must happen in your kitchen soon!

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1 1/4 cup granulated sugar
  • 1 egg
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old fashioned oats
  • 1 cup chopped pecans (or other favorite nut)
  • 1 cup shredded coconut
  • 1 1/2 cups bittersweet chocolate chips

Instructions

  1. Heat the oven to 375F. Line two baking sheets with parchment paper. Set aside.
  2. In a mixing bowl, add the butter and peanut butter. With the paddle attachment on, beat on low speed until combined. Add in sugar and beat for 3-5 minutes until light and fluffy.
  3. Add in egg, water and vanilla and beat until well combined.
  4. Stir in flour, baking soda and salt.
  5. Last, fold in oats, chopped nuts, coconut and chocolate chips.
  6. With a small ice-cream scoop, drop cookie dough on the prepared baking sheets.
  7. Bake in preheated oven for 10-12 minutes or until light golden-brown.
  8. Let cool on baking sheet for 5 minutes then remove to wire racks to cool completely.

    These look amazing. I hope you're feeling better. I'm not a fan of the warmer months either. I don't have allergies but when it's hot, I get so sick. Migraines and terrible stomach aches are the norm and I almost never eat. I've already got a countdown to September going (109 days)!

    It's Friday...and right now the only cure looks to be these awesome oatmeal cookies! These cookies contain everything that's right with the world...chocolate, peanut butter, and coconut. I can't wait to dig into a huge batch of these :)

    Amazing cookies!! Just made a batch of these - delicious. Subsituted the sugar for honey, so added about half a cup extra flour and oats, made 40!
