Classic chocolate cheesecake bars are taken to a whole new level. Creamy white chocolate cheesecake is sandwiched between a chocolate chip oreo crust and silky smooth chocolate ganache. It’s a triple chocolate deliciousness!

 Happy Cheesecake Day!!

Cheesecake day, just like Chocolate day, is one of those days I have it written in my calendar next to family birthdays. I do love chocolate and cheesecake is my #1 dessert choice.

I hope, even if after the 50 cheesecake recipes I shared with you in my last post, you’re still in the mood for some cheesecake.

Rich, decadent, creamy dreamy triple chocolate cheesecake bars!

These chocolate cheesecake bars are one of my family favorites. I’ve made them several times for different occasions and all the time I’ve been asked for seconds. Even took them one time to a church gathering and everyone loved them!

Although I do love cheesecake I prefer making cheesecake bars instead of a big 9 inch round cheesecake. Seems to me it takes less effort and time to make the bars and I can enjoy them even faster! Plus it’s easier to grab one cheesecake bars than a cheesecake slice, right?

The crust is made from a ready to bake Oreo pie crust mixed with butter, ground almonds and chocolate chips and chilled for a few minutes.

While the crust is in the fridge, it’s time to make the filling. Creamy white chocolate cheesecake filling.

Between the chocolate chips oreo crust and the rich chocolate ganache, the white chocolate cheesecake filling (which only has 4 ingredients!!!) not only brings color contrast but also balances the rich dark chocolate flavor perfectly.

Yields one 11X7" baking pan

Ingredients

    Crust
  • 1 Oreo pie crust (170 grams)
  • 6 tbsp butter, melted
  • 1/3 cup finely chopped almonds
  • 2 tbsp cocoa powder
  • 1/2 cup chopped chocolate chips
  • Filling
  • 1 1/2 cups (340 grams) cream cheese (room temperature)
  • 1/2 cup (100 grams) sugar
  • 3 eggs
  • 1 cup (180 grams) white chocolate chips
  • Ganache
  • 3/4 cup dark chocolate chips
  • 1/2 cup heavy cream

Instructions

    Crust
  1. In a mixing bowl combine Oreo pie crust, cocoa powder, almonds, chocolate chips and butter. With a wooden spoon stir to combine.
  2. Using your fingers, press the mixture evenly into the bottom and the sides of an 11X7" baking pan.
  3. Place the crust in the refrigerator until needed.
  4. Meanwhile heat the oven to 350F.
  5. Filling
  6. To make the filling, place the white chocolate in a heatproof bowl over a pan of simmering water. Make sure the bowl does not touch the water. With a spatula stir the white chocolate until melted and creamy. Remove from the heat. Leave to cool for 5 minutes.
  7. In a mixing bowl add the cream cheese and sugar. Beat until light and fluffy.
  8. Add the 3 eggs and stir to combine, beating well after each addition.
  9. With a spatula, scrape the sides of the bowl.
  10. With the mixer running, slowly add the melted white chocolate. Beat until smooth.
  11. Remove the chocolate crust from the fridge and pour the white chocolate cheesecake filling over it.
  12. Bake in preheated oven for 40 minutes.
  13. Remove the cheesecake from the oven and let cool completely at room temperature.
  14. Ganache
  15. Once the cheesecake is completely cooled, it's time to make the ganache.
  16. In a small saucepan heat the heavy cream until it reaches boiling point. Remove from the heat and pour it over the dark chocolate. Leave for few seconds, until the chocolate starts to melt and stir to combine and the mixture is silky smooth.
  17. Pour over the cooled cheesecake and leave to set for few minutes before cutting the cheesecake into bars.
  18. Gently remove the chocolate cheesecake bars from the pan and enjoy!

    These chocolate cheesecake bars look wonderful. When you say to use an Oreo pie crust and mix with the other ingredients, do you mean a pre-made pie crust, then crush it and add to other ingredients? Or crush Oreos and and them mix with all ingredients. If I use Oreos, how many would you suggest? Thank you.

      Hi Kathy, A pie crust is one of those store bought Oreo pie crust and I just crumbled it with the other ingredients. If you're using Oreos, I don't know exactly how many but a pie crust weights 170 grams. Also, make sure you remove the cream from the cookies :) Roxana

    On the Oreo Cheecake bars...for the ganache; by 'dark chocolate' do you mean semi-sweet chocolate ???

      Dark chocolate is unsweetened chocolate, usually over 80% cocoa content. Roxana

          The sugar is for the filling. If you don't like dark chocolate, you could use semi-sweet chocolate, but since the cheesecake filing is sweet it balances with the unsweetened ganache. Roxana

    While i have just come upon your blog/recipe heaven, i was wondering why you use "cups" for cream cheese and an oreo pie crust rather than chocolate cookie crumbs/crushed oreo cookies. Usually recipes have asked for cream cheese by ounce or by the block (8 oz.) and cookie crumbs. I am going to buy the crust crush it and measure it for the next time. I buy the Oreos at Sam's club in bulk ($7 for 10 individually packaged rows) then use a food processor to make the crumbs in bulk and just store them in a ziplock bag for the next couple of recipes. I do this with graham crackers too. I am looking forward to making this recipe for a ladies event tomorrow and hope to try the apple bars real soon. Keep the recipes coming. Thanks

      Hi Carrie, Thanks for stopping by. To answer your questions : I prefer to list the ingredients in cups and grams. I think it's just a preference. If you're having a hard time figuring out how much cream cheese to use, 12 oz is the answer. Or 1 1/2 8oz block. As for the Oreo Pie crust - you will need 170 grams. I mentioned that in the recipe. I try not to buy too many Oreos since I end up eating them before getting around to use them in a recipe. Buying the pie crust prevents me to do so. Hope I answered your questions and I hope your lady friends will enjoy these cheesecake bars Roxana
