A week ago I had mixed feelings about homeschooling full time. Was it the right decision? What if I scar my baby girl for life? Is it too late to enroll her into public school?

I was so consumed with all these silly thoughts going through my mind that I forgot to see the big picture – I’m going to continue to see my baby grow every single minute! We will be enjoying each other’s company every single day and make memories we will never forget.

Homeschooling is fun! We can have pajama’s day whenever we want. We can take a snack break whenever we feel like it. We can bake a cake and throw a tea party whenever we fancy!

And speaking of cake, this caramel apple cake should be happening in your kitchen asap! This delicious and easy caramel apple cake is perfect for fall baking! One bowl, simple ingredients, one cake in less 1 hour from start to finish!

We made this apple cake a few days ago as our “optional – do together” subject.

Since I was baking with my baby girl by my side, I had to pick a cake that is super easy to make.  So simple, you don’t even need a mixer. Just a bowl, a spatula, some everyday ingredients and about 1 hour of your time, baking included!

Yes, my dears, one bowl, one cake, one hour! Simple as first grade!

While the cake is baking, about 45 minutes you can brew yourself some coffee, find a good book to read and relax. You deserve it! caramel apple pie cake recipe 3

The cake is very tender and soft and packed with apple goodness. I took a shortcut and actually used canned caramel apple pie filling in the cake. Somehow similar with the peach cake I made a while back. Easily noticeable from the photos, the cake is incredibly moist. The caramel drizzle on top of the cake takes it to a whole new level. I used a store bought caramel sauce, but you can make your own if you prefer (maybe we do so during a future optional class)

Serve the cake room temperature or chilled, however you prefer. My recommendation is for room temperature with a cup of hot coffee in the other hand. Flavor your coffee with International Delight caramel macchiato coffee creamer for an extra caramel flavor! (yes, I’ll take some coffee with my creamer, thank you very much!)

Ingredients

  • 3/4 cup (150 grams) brown sugar
  • 1 1/3 cups milk
  • 2 eggs
  • 4 oz (114 grams) butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (300 grams) all-purpose flour
  • 1 1/2 cups caramel apple pie filling
  • optional
  • caramel sauce - to drizzle over the cake

Instructions

  1. Heat the oven to 375F. Grease a 10 cups bundt baking pan. Set aside.
  2. In a mixing bowl combine the brown sugar, milk, eggs, melted butter and vanilla extract. Stir in the flour followed by the caramel apple pie filling.
  3. Stir until just combined. Do not overmix the cake batter.
  4. Spoon the batter into the prepared baking pan and bake in preheated oven for 45 minutes or until a toothpick inserted in the center comes out clean.
  5. Remove the cake from the oven, let cool about 10 minutes on a wire rack before inverting to remove the cake from the pan.
  6. Cool completely.
  7. Optional, just before serving, drizzle caramel sauce all over the cake.

      Hi Marcy, My local Walmart sells it. I used this one from Lucky leaf http://amzn.to/1jI9w9D but Wilderness and Comstock have caramel apple pie filling too
