Greek yogurt chocolate cake recipe

Ingredients

  • 2 eggs
  • 1 1/4 cups sugar
  • 1 cup Greek yogurt
  • 2 tablespoons grapeseed oil
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa
  • 1/2 cup self raising flour
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder

Instructions

  1. Heat the oven to 350F. Grease an 8” round cake pan. Set aside.
  2. In a mixing bowl add the eggs and sugar. With the paddle attachment on beat on low speed until thickened and pale in color.
  3. Add the yogurt, oil and vanilla extract. Stir to combine.
  4. Gently fold in the cocoa powder, flours and baking powder.
  5. Pour the batter into the prepared pan and bake in preheated oven for 45 minutes.
  6. Remove from the oven and let cool completely in the pan before removing it.

    My Fave brunch item would be a French toast casserole or a breakfast casserole with sausage, potatoes, eggs, peppers and salsa. My dad makes a really good one when I visit him that I just love!

    Is there anything that can't be done with Greek yogurt? I'm sure it adds just enough tanginess to balance the rich chocolate flavor in this cake!

    My husband is making dinner for all of the women in his life who are mothers this Sunday. Invited guests are his mom, my mom, our daughter, our granddaughter's mom and me. Of course he also invited my dad, his dad, our son-in-law and my son;) I am going to make this cake dessert! My favorite brunch item would be Swedish Pancakes. They are like crepe's. Happy Mother's Day!
