Super easy to make, this buttery, moist and soft apple cake has layers of thinly sliced apples and a sweet and flavorful streusel topping! Just perfect with a cup of coffee!
I don’t even know how to begin describing this apple cake. It’s buttery, moist, soft, with thinly sliced apples and topped with a sweet cinnamon streusel topping. If you ask me, the layers of soft apples and the cinnamon streusel topping are the best part. Better than any frosting! I usually pick up the topping and the soft apples before eating the rest of the cake. Just like a picky eater!
The apples make this cake incredible moist. They not only release moisture during baking but their moisture makes the cake stay fresh for days after the cake is baked (that if the cake lasts that long!)
If I have to pick one fruit to make desserts with year round, it would be a tie between apples and berries. I love them both equally, either to eat fresh or to bake with. This apple cake makes indeed a wonderful fall dessert but since somehow winter has not arrived in my area, I can still enjoy a slice.
Plus, since it’s so easy to make, I see no reason you should not be making it for you and your family to enjoy while sipping on a cup of cocoa, coffee or tea. You can either have a piece in the morning or in the afternoon. Don’t worry, I won’t tell anyone if you have two slices!
Like I mentioned earlier, the cake is super easy to make.
You start with the cinnamon streusel topping – just combine either in a bowl of a food processor cold butter, sugar, cinnamon and self rising flour. I know self rising flour is one of those ingredients you don’t use very often, but I have tried this cake recipe using all-purpose flour and baking powder but the results were not as delicious as I hoped.
For the cake you’ll also need self rising flour, soft butter, sugar, eggs, cinnamon, milk and thinly sliced apples. I used granny smith apples but you can also use any cooking apples you have on hand. Honey crisp and Roma apples are one of my favorites as well.
The cake batter is thick, you’ll need a spoon or a spatula to arrange it into a 9″ round cake pan. One you smooth out the top, arrange the apple slices in an even layer. Finish the cake with the streusel topping before baking it. Keep in mind the cake requires little over an hour in the oven and a few hours to cool completely before you can slice it! I usually make it in the evenly and have a slice with my morning cup of coffee! After all that’s why is called coffee cake, right?

Ingredients
- 1/2 cup (113 grams) butter, room temperature
- 1/2 cup (100 grams) sugar
- 2 eggs, room temperature
- 1 1/4 cups (150 grams) self rising flour
- 1 teaspoon cinnamon
- 2 tablespoons milk
- 3 Granny Smith apples, peeled, cored and thinly sliced
- 3/4 cup (90 grams) self rising flour
- 6 tablespoons (84 grams) butter, cold
- 1/2 cup (100 grams) sugar
- 1 teaspoon cinnamon
Instructions
- Heat the oven to 350F.
- Grease a 9 inch round springform cake pan and set aside.
- Make the streusel topping
- In a mixing bowl, with a hand whisk or a fork, combine the flour, sugar and cinnamon. Rub in the cold butter until the mixture resembles coarse crumbs.
- Refrigerate while making the cake batter
- In a mixing bowl add the soften butter and sugar. With the paddle attachment on, beat on low speed until light and fluffy, about 3-5 minutes.
- Beat in the eggs, one at a time, and scrape the sides of the mixing bowl with a spatula.
- Stir in the milk followed by the flour and cinnamon.
- The cake batter will be thick.
- Spoon the batter into the prepared cake pan and smooth the top.
- Arrange the apple slices in an even layer over the cake batter.
- Sprinkle the streusel topping over the sliced apples.
- Bake the cake in the preheated oven for about 55 minutes to 1 hour and 5 minutes or until browned and firm to touch.
- Remove the cake from the oven and cool completely on a wire rack.
- Once cooled, remove the cake from the pan and with a sharp knife cut into slices.
- Serve with a scoop of ice-cream or just a dust of powder sugar
