 We’ve been planning my trip for a couple of months now and few weeks before our departure day i had the crazy idea of throwing a little birthday party for me. A small one, nothing fancy since my actual birthday is next week. All set and done, all I had left is to get the cake.

I was on the fence if I should buy or make my own birthday cake but in the end decided to make myself a chocolate cake with dreamy chocolate buttercream frosting. And not just any chocolate cake recipe, but the one I received from my friend Liz.

When I asked my friends to share with me their favorite chocolate desserts I received all kinds of recipes. I would have such a hard time to pick one. I can’t even pick two and name them as favorite, but if you’re looking for a layer chocolate cake to make for an upcoming birthday or a special celebration look no further, this chocolate cake recipe is all you need!

The cake is moist and tender, sweet and chocolate-y, and the chocolate buttercream frosting is so creamy I wanted to eat it with a spoon straight from the mixing bowl.

I must admit I was a little worried since it was the first time I made a cake with such a runny batter and my first thought was to discard the batter and start from the beginning since I couldn’t figure out what I forgot to add but nothing to worry. Actually, the batter looked just right.

The hot coffee (you can also use hot water if you prefer) and the buttermilk added to the cake batter help keep the cake so moist even days after it’s baked.

    Hi Roxana, in your notes, you mentioned buttermilk being in the cake batter, but when I follow the link for the recipe, there is no mention of buttermilk. Did you replace the milk with buttermilk, or is the buttermilk additional? If so, how much did you use?

    Hi, When you say buttermilk, is it milk and vinegar mixture or buttermilk made of curds and water? Thanks.

      Hi Neha, I buy buttermilk from the grocery store, but if you don't have any you can make your own from milk and lemon juice/vinegar. Roxana

    I want to make this chocolate cake and icing for my granddaughter's birthday. After the cake is baked and frosted, can it be frozen? I want to leave the cake in my freezer before I go on vacation and have her come to my house to get her cake.

      Hi Donna, You can freeze the cake but you have to make sure it doesn't get freezer burns. To prevent that I suggest you place the cake in the freezer for no more than 1 hour and after that place the cake in two large freezer ziplock bags. When you want the cake, take it out of the freezer and leave it in the fridge to thaw. Happy birthday to your granddaughter and enjoy your vacation!
