Throughout the years I had a love-hate relationship with coffee. I started drinking coffee in my last year in high school as the final exam was finally approaching. Shortly after that I took a break and we found each other in college while trying to keep up with classes, part-time job and me time. Once college was over we had an ongoing relationship for few more years, nothing serious but broke up few years ago when I got pregnant. At that time I told myself I’ll never drink coffee again.

No exams, no job.All I had to do is take care of my family.

I’m a stay-at-home mom!

I can survive without coffee!

How naive was I!

Fast forward 2 years, a stay at home mom, an energetic toddler who doesn’t go to preschool or day care, a house to clean, a family to feed and a blog. Coffee is now my BFF! Some days I’m so crazy busy I don’t even have time to sit down and enjoy it. It’s a sip here, a sip there.

But my love for coffee doesn’t stop at just drinking it. I love to eat it as well.

When we decided to have coffee as this month’s secret ingredient to our chocolate party I had no idea what I was going to make. Coffee and chocolate go together so well and after running some ideas in my mind I finally decided upon chocolate chip cookies with a touch of coffee and cream.

These chocolate chip cookies are the classic cookies but I added heavy cream and instant coffee to the cookie dough. To make them even more irresistible and do a double coffee and cream effect I used semisweet chocolate chips (to represent the coffee) and white chocolate chips (to represent the cream).

Chocolate party is a monthly virtual party where everyone is bringing a dessert featuring chocolate and one secret ingredient.

2.) Include a link back to this post, a monthly round-up or the Chocolate party page.  Optionally, add the Chocolate Party logo in your blog post or on your sidebar.

3.) Your recipe must be published during the current month. Please do not link old recipes, they will be deleted.

I hope you’ll join our party and bake along with us. Also, if you’d like to know what are we up to and what ingredients we pick for the next parties, join our Facebook group.

All submitted posts will be pinned to the Chocolate party Pinterest board and will be promoted on other social media platforms using the #chocolateparty hashtag.

Ingredients

  • 1/2 cup room temperature butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 1 egg yolk
  • 1/2 tsp baking powder
  • 2 cups all purpose flour
  • 2 tsp instant coffee granules
  • 1/4 cup chocolate chips (white and semisweet combined)

Instructions

  1. In a mixing bowl, with the paddle attachment on cream butter and sugar until light and fluffy, for about 2 minutes.
  2. Add the heavy cream and egg yolk and beat well, scraping the sides of the bowl with a spatula.
  3. Add the baking powder, flour and coffee granules and stir to combine.
  4. With a spatula, fold in the chocolate chips.
  5. Gather the dough in one ball, wrap in plastic and refrigerate for at least 30 minutes.
  6. Meanwhile heat the oven to 350F.
  7. When the dough is chilled place spoonfuls on two baking sheets (I use an OXO medium cookie dough scoop) and bake in preheated oven for 12-15 minutes or until the edges just begin to brown.
  8. Remove from the oven, leave few more minutes on the baking sheet and cool completely on wire racks.
  9. Enjoy!

    Coffee-drinking, I imagine, is a requirement with a toddler on the premises. (My niece lost weight without going to the gym. She is/was constantly chasing her son, lifting her son - well, you know the routine.) Anyway, this is another home run from Roxana's Baking. But then again, aren't all your goodies?

    Confused. In the post under the pic you say "coffee powder", but In the recipe, you say "coffee granules". Those are two Very different things to me. Thanx for a lovely recipe (what a combo!)...

      Joanne, You can use wither coffee granules or powder, or depending on the brand it may say "instant coffee crystals" - they will do the same thing. Once in contact with wet ingredients they will "melt" it.

    Seems like so few chocolate chips for so much flour. For a typical batch of chocolate chip cookies that call for 2 and 1/4 cups of flour, a whole bag of 12 oz chocolate chips (2 cups) is usaually used, while this only calls for 1/4th. Sounds like you'd only get a few chips per cookie, if that many. Is there a reason why the amount of chips is so small?

    I made these cookies and they were delicious. One batch last week and one batch this week because I had some leftover ingredients. The combination of the cream, mixture of chips, and coffee was perfect! I have a question though...they seemed to turn out a little thicker than yours (as seen in your picture) both times that I baked them. I used the same size OXO cookie scoop that you did. They were fine on the outside but a little less cooked on the inside than I would have liked. Did you flatten yours at all before baking them? If not, would flattening them a little help them bake a bit more in the middle? Thanks!
