Being a food blogger leads people to believe I make dinner from scratch every single night. I would love to, don’t get me wrong, but I just don’t have the time or energy half of the days. I take shortcuts! I cook once for 2 meals. Or I focus on 30-minute meals. Or make ahead casseroles. Anything to save me some time.

Cooked pasta is probably my favorite shortcut. I’ve been known to always have cooked pasta in the fridge. It comes in handy not just when tossed with your favorite pasta sauce, but in a quick and flavorful pasta salad as well!

Pasta salads are great because you can make them ahead of time (I highly recommend you do so to allow the flavors to come together), take very little time and are easily adaptable. Perfect for those busy days when you need to make dinner in advance.

Add some grilled chicken to your pasta salad and you’ve made a simple weeknight meal in less than 15 minutes!

When I first mentioned pasta salad for dinner, my husband quickly decided he’s not hungry. He later told me he thought I’m going to serve a mayo-drenched pasta salad.

No, this is not that salad! My grilled chicken pasta salad is loaded with chunks of Tyson® Grilled & Ready® Chicken, chopped veggies, fresh fruit and herbs marinated for a couple of hours in a zesty Wish-Bone® Italian Dressing. The combo is off-the-hook incredible!

In all honesty, I love the flavors of the salad after I let it in the fridge overnight. Just before serving I drizzle a little bit more dressing over it to slightly freshen it up, grate some Parmesan cheese and I’m ready to dig in!

With every grilled chicken pasta salad I make, Tiffany rates it even higher. Obviously, the more colorful it is, the higher the rate. After a few bites, I hear her saying “I love the colors and textures of this salad” – she sees herself as a chopped judge or something. I guess that’s what happens when Food network and Cooking Channel take over the Disney Channel.

This grilled chicken pasta salad is by far one of the easiest dinner you can throw together on a busy weeknight. Thanks to Tyson® Grilled & Ready® Chicken I can load my salad with protein elevating it from side dish to main dish.

The Wish-Bone® Italian Dressing gives the salad that tangy fresh zing making it a favorite meal year round (especially on a hot summer day!)

Ingredients

  • 1 1/2 cups Tyson® Grilled & Ready® Chicken
  • 3-4 cups cooked pasta
  • 1 generous cup halved cherry tomatoes
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup halved grapes
  • 1 small apple or pear, diced (optional)
  • few basil leaves, chiffonade cut
  • salt and pepper
  • 1/2 cup Wish-Bone® Italian Dressing
  • grated parmesan

Instructions

  1. In a mixing bowl add all the ingredients but the grated parmesan.
  2. Toss to combine.
  3. Cover the bowl with a lid or plastic wrap and refrigerate for a couple of hours.
  4. Just before serving, mix in the grated parmesan.
  5. Serve cold or at room temperature.
