Easy rice, vegetables and sausage casserole

Weekends are always the busiest days of the week. As much as I try to find some free time there are a million things left to be done Saturday or Sunday. Grocery shopping & meal planning, soccer games, birthday parties, house chores. We hardly have any time to sit down.
Rush, rush, rush to get everything done by Sunday night so the coming week doesn’t start with a pile of laundry to wash/fold or with an empty fridge.
And with the holidays fast approaching, I doubt things will slow down.
Obviously, I hardly have time to cook. Usually we have leftovers or something that comes together as fast as snapping your fingers.  Luckily for me, after making this easy rice, vegetables and sausage casserole for the first time a couple of weeks ago my family requests it almost every weekend and it’s already on our Thanksgiving menu as a side dish!
No worries, my lovelies! I can find 5 minutes to put this casserole together for you! Yes, you read that right. It takes 5 minutes of prep time!  The secret to this super easy recipe is using Success® White Rice.

Success Rice on Pinterest To make this super easy rice, vegetables and sausage casserole you’ll need 2 bags of Success® White Rice, frozen vegetables, broth, shredded cheddar cheese, sliced cooked sausages, cherry tomatoes and some grated parmesan.  Start my mixing the rice with the frozen vegetables.
I usually use a mix of green beans, peas, carrots, and corn but I’m sure you can use whatever mix your family enjoys.
Pour the broth over and cover with grated cheddar. Top the casserole with the sliced sausages and cherry tomatoes. Bake and serve! That’s all!  As you see, the hardest part is probably slicing the sausage or the cherry tomatoes.
The rest of the recipe is based on “dump the ingredients in the casserole and wait for the magic to happen.”

Ingredients

  • 2 bags Success® White Rice, uncooked
  • 12 oz. frozen vegetables
  • salt and pepper
  • 2 cups chicken or vegetable broth
  • 1 cup grated cheddar cheese
  • 10 oz. cooked sausage, sliced
  • 4 oz. cherry tomatoes, halved
  • 2-3 tablespoons grated parmesan

Instructions

  1. Pre-heat the oven to 375F.
  2. In a 2qt casserole combine the rice and frozen vegetables. Season with salt and pepper. Pour the broth over them.
  3. Sprinkle the grated cheddar cheese over the rice mixture.
  4. Top the casserole with the sliced sausage, cherry tomatoes and grated parmesan.
  5. Bake the casserole in the preheated oven for 30 to 35 minutes until the rice is puffed.
  6. Serve warm.

    My favorite variety is the Whole Grain Brown Rice, because it has a nice chewy texture and holds up well to our favorite rice dish, leftover chicken (or turkey) and veggies in a cream sauce, served over rice. We have this meal at least every couple of weeks, sometimes more often.

    I am from Louisiana and have learned that it is hard to find good Cajun red beans and rice. So I make them myself the way my grandma used too. So now I have to make them for Christmas dinner and i also make them for all my family and even the workplace.
