If asked what’s my favorite chocolate chip cookie I don’t think I can say for sure which one is. It pretty much depends on my mood. Chewy. Crisp edges. Ooey gooey. Maybe soft and cake like. But if I have to narrow it down, just a little bit, then I have to say it has to be packed with oozing chocolate.

Now, of course, in my search for the perfect chocolate chip cookie I have to try lots and lots of recipes. All in the name of research, you know.

Now, these  brown butter rolo toffee chocolate chip cookies are close to perfection.

The butter is browned till it gets the nutty flavors enhanced also by the addition of few drops on vanilla extract. Chopped Rolo give these cookies lots of chewy gooeyness. Add to that a handful of toffee bits. And some brown sugar to make the cookies extra chewy. And lastly thrown in some mini chocolate chips.

Now, about the chocolate chips. In my humble opinion I think adding a few more chocolate chips would indeed make these cookies perfect! The recipe calls for just 1/4 cup miniature chocolate chips but next time I plan on making them with 1/2 cup chocolate chips. Or even chocolate chunks. Because you can’t go wrong with too much chocolate.
