I’ve said it before and I’m going to say it over and over again. It’s HOT!!
I do not want to cook, I do not want to bake, all I want is splash in the water while eating ice-cream. And I have the feeling there are lots of you who want the same thing. Why does summer has to be so hot?
Even my ice-cream was melting the moment I took it out of the freezer. And the A/C is running all the time!
Lucky me there are 3 new Cold Stone creamers on the market. Hot for cookie, Founder’s Favorite and Churro Caramel. And I don’t know about you, but iced coffee never sounded better! Not only do I love to add a small scoop of ice-cream in my coffee but I have discovered I can freeze Cold Stone Coffee Creamer and add an ice cube or two in my coffee.
But Cold Stone creamer is also just perfect to add more flavor in chocolate chip cookie. Who doesn’t want an chocolate chip cookie ice-cream sandwich?
Of course my go-to creamer was the Hot for cookie one! Can you blame me?

Cake like chocolate chip cookie, flavored with Hot for Cookie Cold Stone Coffee creamer and sandwiched with ice cream.

Ingredients
- 1/2 cup butter
- 1/3 cup sugar
- 1 egg
- 1/3 cup hot for cookie coffee creamer
- 1/3 cup buttermilk
- 1 1/4 cup all purpose flour
- chocolate chips (1/3 to 1/2 cup)
Instructions
- Heat the oven to 350F. Grease a Wilton 12 woopie pie pan and set aside.
- In a mixing bowl cream the butter and sugar until light and fluffy. Add the egg and mix to combine.
- In a cup combine the buttermilk and hot for cookie coffee creamer.
- Add the flour alternately with the creamer to the butter mixture. Stir until just combined.
- Divide the batter between the 12 holes. Sprinkle chocolate chips on top of them.
- Bake in preheated oven for 12-15 minutes or until the edges are golden brown.
- Remove from the oven, leave for 2-3 minutes before inverting the pan on a wire rack to cool completely.
- When cooled, sandwiched the cookies with a big scoop of ice cream!
