School started a couple of weeks ago, soccer season is in full swing and days are getting shorter. It’s that time of the year when dinner is slowly cooked in the crockpot throughout the day or quickly tossed in a skillet while overseeing 10,000 other tasks.
If you’re anything like me, and inexplicably scared of leaving the house while the crockpot is on, you rely on one pot dinners. And there are nights when even those one pot dinners require too much of your attention.
You need to babysit it on the stove, stirring from time to time, add a little bit of this, a little bit of that. Basically, you’re glued to the stove almost the entire time dinner is cooking. Who has time for that?

Dinner has never been easier than this One Pan Garlic Herb Pork and Potatoes. All you have to do is purchase marinated pork and season your potatoes before placing the pan in the hot oven.
Using Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet you only have to worry about seasoning your potatoes! Just a little bit of olive oil, salt, chopped rosemary and thyme and a few cloves of garlic is good.
I love Smithfield Marinated Fresh Pork from Food Lion! The Roasted Garlic & Herb Pork Loin Filet is my favorite but all their marinated products have great flavor.

One little thing I’d like to mention before leaving you with the recipe — not all pork loins, sirloins, or tenderloins are cut exactly the same! What that means is not all pork will be done at the exact time. I highly suggest using a meat thermometer and set the internal temperature at 150F.
The same goes for the potatoes. If you cut your potatoes in bigger pieces they will not be done by the time the pork is done. I prefer small, 1 bite potatoes. If yours are bigger, cut them into wedges.
When your pork and potatoes are almost done, if your oven has a convection or a broil turn it on to brown the veggies just a touch!
As you can see, with only a few minutes to spare you turn a few simple ingredients into a fabulous and totally delicious dinner!
Serve it with a big fresh salad. Or not.

Ingredients
- 1-2 Smithfield Marinated Roasted Garlic & Herb Pork Loin Filet(s)
- 2 pounds small potatoes or potatoes wedges
- 5-7 garlic cloves
- 1 1/2 tablespoons olive oil
- 1/2 tablespoon chopped fresh rosemary
- 1/2 tablespoon chopped fresh thyme
- 1 teaspoon salt
Instructions
- Heat the oven to 375F.
- Arrange the pork loin filet(s) on a baking sheet.
- Add the potatoes and garlic cloves.
- Drizzle the olive oil over the potatoes and scatter the fresh herbs and salt over potatoes.
- Toss the potatoes to make sure they are all well season.
- Bake in preheated oven until a meat thermometer inserted into the thickest part of your pork reaches 150F.
- Remove from the oven and let sit around 10 minutes before slicing
