So amazingly easy to prepare, these gooey fudgy brownie bars will leave everyone drooling! Fudgy brownie, creamy cheesecake, gooey marshmallows and oozing chocolate – what’s not to love?
I have a confession to make. I watch very little TV. I have a couple of shows I watch every week but past that I can’t name 5 of the housewives, all series combined, I don’t know who’s the most fashionable or what are the latest trends.
And I’m OK with that. I get to watch a little bit of news in the evening, cooking channel in the background and the rest, well – not my piece of cake.
My piece of cake is a whole pan of these gooey fudgy brownies! Come closer to tell you a secret – I already made them twice this week and will make them again Sunday for Game day party – because I’m all about the food!
These, THESE brownies should win take home the trophy, I’m telling you!
Just look at all that gooeyness! Those slightly toasted marshmallows on top of a rich fudgy brownie and creamy cheesecake. And you know how much I love chocolate and cheesecake together!
But what you don’t know is that I took a little shortcut when making these irresistible brownie bars! I used a Pillsbury fudge brownie mix. Shhh. Once everyone had a bite, they were hooked. No one knew they were made with a store-bought mix!
Double win for this mamma!
If I’m being totally honest, it’s a triple win! Becuase these fudgy brownies are so easy to make, you can have your little ones in the kitchen with you.
Tiffany always has a blast when I’m asking her to bake with me. From measuring some of the ingredients to scattering marshmallows and the chocolate chunks on top of these brownies (you’ll see her little fingers for a second in the video below) it’s always a lot of fun. She’s been with me in the kitchen since she was a baby, and now, she can mix things up all by herself.
Knowing how busy I’m going to be preparing all the appetizers and finger foods for the game day, I’ll most likely ask her to mix up the brownie batter all by herself. The dry ingredients come already measured in the box, all she has to do is measure oil, water and crack 2 eggs. 50 strokes later and the brownie batter is done!
It’s simple, it’s easy and she’ll feel “grown-up”.
Hosting a Game day party is no easy task. From the moment you decide what food you’re going to cook, going shopping followed by countless hours in the kitchen it feels like Thanksgiving or Christmas dinner all over again.
With a Walmart store 10 minutes away from the house I can do my all my shopping and be back home in less than 1 hour! And let’s not forget Valentine’s day is next weekend so I need to prepare another feast again. You bet I stocked up this time so I don’t have to go out again next week!
And yes, a couple of boxes of Pillsbury fudge brownie mix came home with me. I already used 2 and have something else prepared for my sweetheart (come back Friday to check it out!)

Ingredients
- 1 Pillsbury fudge brownie mix + the ingredients called for on the back on the box
- 1 package (8 oz) cream cheese, room temperature
- 1/4 cup butter, room temperature
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons all purpose flour
- 2-3 cups mini marshmallows
- 1 cup semi-sweet chocolate chunks or chocolate chips
Instructions
- Heat the oven to 350F.
- Line a 13X9" baking pan with parchment paper. Set aside.
- In a mixing bowl add the cream cheese, butter and sugar. With the paddle attachment on, beat on low speed until light and fluffy.
- Beat in the egg and vanilla extract.
- Stir in the flour and beat until just combined. Set aside.
- In a separate bowl combine the brownie mix with the ingredients listed on the back of the box (oil, water, eggs)
- Pour the brownie batter into the prepared pan. Spread to cover the bottom of the pan.
- Spoon the cheesecake filling over the brownie and spread it into a thing layer.
- Bake the brownies into the preheated oven for 30 minutes.
- Without turning the oven off, remove the pan and top the brownies with the marshmallow and chocolate chunks.
- Return to the oven and bake for an additional 5-10 minutes until the marshmallow are puffed and the chocolate is melted.
- Let cool completely before cutting into pieces.
- For the best results, cut the brownies with a wet knife, cleaning it after each cut.
