If I had to pick one savory meal to eat every single day it would be a tie between cheesy potato and cheesy pasta. They are both comfort food to me. Of course, the more cheese I add, the better it tastes but in the same time the calorie count gets up to the sky and I have to leave some room for dessert! Life is sweeter this way.

It took me a while to come up with a lightened up potato and cheese frittata and I have to tell you, this version is amazing! Potato, check! Cheese, check! Ham or bacon, check! I told you! It has everything you want in a loaded baked potato! Lightened up loaded potato and cheese frittata recipe There are two secrets to get a light frittata. The first one is using a flavorful cheese. The more flavor the cheese has, the less you use, cutting down on the calories. Using a reduced fat cheese like Dubliner from Kerrygold is even better! Double win!

The second secret is substituting some of the whole eggs with just egg whites.

I like my potato with diced lean ham. You can use bacon instead but keep in mind, most likely bacon has 3-4 times more calories that ham, especially fat!

If you prefer you could top your frittata with sour cream, but I did not miss it on mine. The roasted tomatoes bring plenty of flavor, plus a caramelized onion and finely chopped garlic are added to the frittata as well.

Ingredients

  • 1 onion, finely sliced
  • 1 teaspoons olive oil
  • 20 oz shredded potatoes, rinsed and well drained
  • 2-3 cloves of garlic, finely chopped
  • 4 oz reduced fat Dubliner cheese, shredded
  • 1 cup lean fully cooked ham, small diced
  • 1 1/2 cups fat free milk
  • 2 whole eggs
  • 4 egg whites
  • salt
  • pepper
  • cherry tomatoes
  • sour-cream (optional)
  • chives or green onions, chopped (optional)

Instructions

  1. Heat the oven to 350F. Grease a 10" cast iron skillet.
  2. Coat the bottom of a thick-bottom sauté pan with olive oil. Heat the pan on medium heat. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and cook for 5 minutes, stirring occasionally, or until the onion is softened and translucent.
  3. Remove from the heat and let cool.
  4. In a large bowl add the shredded potatoes, chopped garlic, shredded cheese, diced ham and milk. Stir to combine.
  5. In a small bowl lightly beat the whole eggs with the egg whites.
  6. Add the egg mixture to the potatoes. Stir in the cooked onions as well.
  7. Season with salt and pepper.
  8. Spoon the mixture into the prepared skillet and top with cherry tomatoes, if using.
  9. Bake in preheated oven for 1 hour and 15-20 minutes.
  10. Remove the skillet from the oven and cool for few minutes before slicing the frittata.
  11. Optional, you can top each frittata slice with a dollop of sour cream and chopped chives.
