Have you ever wondered why books are priced $.1 on Amazon?

Really? 1 cent? How bad can that book be to be priced so low. Why not just say it’s free.

It’s not like it’s going to make a difference. You’ll still have to pay the $3.99 for delivery.

A while back we went to Ollie’s to get some more coloring and activity books for our little lady bug and saw a couple of Better Homes and Garden Christmas Cooking Cookbooks. They were $3.99 and somehow, don’t know how, a few landed in my cart. For $4 I was pretty sure I can find a recipe or two in them to justify the price.

At home, somehow I ended up on Amazon and saw they were priced $.1.

Immediately I went to browse though the book and see why they were so cheap.

Except the fact that the books are close to 10 years old I did found some recipes I really want to try, like this Eggnog quick bread.

I had some Silk eggnog in the fridge and wanted to make something with it for my 12 weeks to Christmas post but didn’t know exactly what.

Cookies came first to mind, but I just made these pumpkin kissed brownie cookies. I had to make something else, just wasn’t sure what.

So I went to my bookshelf and took out all the Christmas cookbooks and magazines, something had to come out.

Cake, cookies, cupcakes, bread. Bread! I can do that. It’s not my favorite thing to bake but why not. Sounds easy and it’s great with my cup of coffee in the morning.

I followed the recipe from the book, with only 2 minor touches : I used Silk eggnog instead of dairy eggnog and Sprinkled some mini-chocolate chips on top of the cake (like you haven’t seen that coming).

I love how the bread smells, from the spices and the eggnog. The bread turned out moist, not too crumbly, like a cake, more like a muffin.

I was glad to have a slice with my cup of coffee and definitely will make it again, maybe next time I’ll add the chocolate chips to the batter, not just sprinkled on top.

Yields two 7X3 loaves

A flavorful eggnog quick bread perfect for Christmas breakfast

Ingredients

  • 2 1/4 cups (270 grams) all purpose flour
  • 2 tsp baking powder (8 grams)
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup (200 grams) sugar
  • 2 eggs
  • 1 cup (240 ml) eggnog
  • 1/2 cup (113 grams) melted butter
  • 1 tsp vanilla extract
  • 1/3 cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350F. If you're using paper pans (like I did) there's no need to grease them. If using ceramic or metal, grease the bottom and the sides of two 7X3 baking loaf pans.
  2. In a mixing bowl add the flour, baking powder, salt, nutmeg and sugar. Stir until combined and make a well in the middle.
  3. In another bowl lightly beat the two eggs and mix them with the melted butter and vanilla extract.
  4. Pour the wet ingredients over the dry ones and stir just until combined.
  5. Pour the batter into the prepared pans, sprinkle the chocolate chips of top and bake in preheated oven for 40 minutes or until a toothpick inserted in the middle comes out clean.
  6. Cool slightly in the pan before removing.
  7. Enjoy!

    I hope they get egg nog in our stores soon! I love it and to put it in this bread? This bread is almost a cake, but since you're calling it bread, I can have it for breakfast so we're going with that! Pinned!

    I have a little eggnog lover in my family, so I will be making this bread for him as soon as the eggnog shows up in the store;-) I just picked up a bottle of eggnog extract and can't wait to try it, I'm thinking vanilla and eggnog extract together in your bread would be good?!

    Could I use a bundt cake pan to make this instead? If so, how would it change the recipe/cooking times?

      Hi Kelly, I'm pretty sure you can bake it in a bundt cake. I can't tell for how long since I did not try it yet. My advice is to keep an eye on the cake after, maybe, 25 minutes.
