Hand written recipes. Mostly in pencil, rarely in pen. Some written more than 30-50 years ago. Old, faded and discolored papers. Sometimes even written on a paper napkin. Rarely a recipe card. Age spots and spots in a couple of places over the recipe. Maybe batter spills from the same cake or maybe something else?

I wish I knew the stories that come with old recipes. All the family gatherings. Birthday parties or holidays spent together. 

This chocolate cake with coffee chocolate ganache is one of those old recipes. So old it has been in my friend Amber’s family for at least 3 generations!

The moment I received the recipe from Amber I was a little hesitant. I love chocolate. I love coffee. I love chocolate and coffee but mayonnaise in a cake? I’ve seen recipes floating around for mayonnaise cakes but can’t say I had ever tried one nor was I curious. I love combining chocolate with lots of other ingredients, but mayonnaise was not on the list. Amber’s comment “This cake recipe defines chocolate cake for me” made me re-think the whole mayonnaise thing.

Now, after making the chocolate cake, I had to say: you won’t even know this cake is made with mayonnaise! It’s moist and tender. It’s sweet and has a rich chocolate taste and the coffee it’s just a subtle flavor.

Ingredients

    Coffee chocolate cake
  • 2 cups all purpose flour
  • 1 cup sugar
  • 6 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup mayonnaise – no substitutes
  • 1 cup cold coffee
  • 1 teaspoon vanilla
  • ganache
  • 1/3 cup heavy cream
  • 1 teaspoon unsalted butter
  • 1 tablespoon cold coffee
  • 1 cup semi-chocolate chips

Instructions

  1. Heat the oven to 350F. Grease a 9" baking cake pan. Set aside
  2. In mixing bowl, with the paddle attachment on, add mayonnaise, cold coffee and vanilla. Beat until combined.
  3. Slowly, add the dry ingredients. Beat until smooth – scraping the sides of bowl, if needed.
  4. Pour the cake batter into the prepared pan and bake for 28 minutes or until a toothpick inserted in the center comes out clean.
  5. Remove from the oven and let the cake cool completely in the pan on a wire rack.
  6. Once the cake is cooled, make the ganache.
  7. In heavy saucepan over medium heat add heavy cream, butter and coffee just to boiling point – Do not boil.
  8. Remove from heat and add chocolate chips. Wait 30 seconds and stir with whisk until smooth. Spoon or pour sauce over cake.
  9. Slice and serve.

    I know a bit about the history of _Mayo-cakes.. they substituyes the eggs and add to the cake some extra moist. I dont wanna taste it either.. but i think they looks georgeous

    Hi I have a question, is the picture of the chocolate cake you have here the same as the recipe for the mayo cake?? the reason I ask is that the the one in your picture looks much much more moist than the one on your friends blog... and if so did you do something different?? Thanks

    You state that you halved the ganache recipe; did you also do that to the cake recipe? Because the original recipe is for a 9X13 pan. I like the height and size of your cake. Thanks.

          If you follow the recipe you'll end up with a cake looking like mine :) I know Amber's cake looks a little different but I followed the recipe to the T (only make half of the ganache, it's plenty)

    Mayonnaise is the reason the cake is moist and tender. Think about, mayonnaise is basically egg yolks and oil.

    Hi! Love ur recipes :) Can u tell me what do u mean by cold coffee? Is that coffee af room temperature or is that cold milk and coffee blended together with ice as a drink?
