Hi, My name is Carrie and I am the recipe developer, photographer, and writer behind the blog Bakeaholic Mama. When I think of Christmas recipes the first two that come to mind are sugar cookies and snickerdoodles. I love the two more than you can imagine. Nothing fancy to get me excited just a classic holiday cookie.
I mean now really… is there anything better than a house that smells of fresh baked cookies and cinnamon to warm you up? These cookies are crunchy on the outside, chewy in the middle. Loaded with cinnamon and sugar, and cinnamon chips topped off with a powdered sugar glaze… it’s sugar cookie meets a cinnamon bun.
Ingredients
- 1 cup of unsalted butter. room temperature
- 3 cups of granulated sugar
- 2 eggs
- 2 tsp vanilla bean paste
- 4 cups of all purpose flour
- 2 tsp of baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 cups of Hershey’s Cinnamon Chips
- 2 tbs ground cinnamon
- 1/2 cup granulated sugar
- 1 cup of powdered sugar
- 1 tbs of milk
Instructions
- In the bowl of your electric mixer, cream butter and sugar together until light and fluffy. Mix in your eggs and vanilla bean paste just until incorporated.
- In a large bowl sift together flour, baking powder, baking soda, and salt. Mix into butter and egg mixture until everything has combined.
- Fold in your cinnamon chips.
- Refrigerate dough for 30 minutes.
- In a bowl mix together additional sugar and cinnamon with a fork.
- Roll cookie dough into 1 inch balls. Toss each cookie dough ball in the cinnamon and sugar mixture. Place 2 inches apart on a parchment paper lined cookie sheet.
- Bake at 350 for 10 minutes or until cookies are golden. For a crispier cookie bake longer. If you like them chewy 10 minutes should be perfect!
- Allow cookies to cool on a cooling rack. Meanwhile in a small bowl mix powdered sugar and milk together with a fork or whisk. When smooth drizzle over cooled cookies.
