The first time I tried peanut butter was years ago,  before I came to US. I was curious after hearing about it in the American movies. I wasn’t that impressed so I gave up the thought of trying it again. Once arrived on American land the curiosity pushed me again and bought another jar.  This time I liked it.I started eating some from time to time spread on a slice of toast.

Even tho I was beginning to love this treat I could not talk myself in trying the famous peanut-butter and jelly sandwich. There was something about this combo that didn’t sound to appealing to me. Give me a cheese and jam sandwich and I eat it in seconds, or peanut butter and chocolate but peanut-butter and jelly …. not really.

Few months ago Tiffany was asking for a peanut-butter and jelly sandwich but we were out of grape jelly. The only thing I could have used instead of grape jelly was some raspberry preserve forgotten on the fridge door. Peanut-butter and raspberry preserve did sound good, so I made myself a sandwich as well. Oh, it tasted even better that I thought. From that day I was hooked, hooked on peanut-butter and jelly sandwich, but made with raspberry preserve.

Few weeks ago I discovered Cindy’s blog “Once Upon A Loaf“. Few days later I was exchanging emails with Cindy and she invited me to participate in her “Peanut-Butter and Jelly Project” .

I was a little skeptical at first, but I changed my mind later. My favorite peanut butter cookies sandwiched with raspberry jam is my take on American Peanut-butter and Jelly Sandwich.

I made these cookies for the first time about a year ago (this was the first time I was actually making a sandwich out of them)  and since then I tried different other recipes but none of the cookies turned out as good as these ones. They are the softest cookies with a strong peanut-butter taste. Think about melt in your mouth butter cookie but with peanut-butter.

Without much ado I give you the Peanut Butter and Jelly Sandwich Cookies

Peanut Butter and Jelly Sandwich Cookies

Yields 15 sandwich cookies

Ingredients

  • 8 oz creamy Reese's peanut-butter
  • 6 tbsp butter
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • ~ 15 tsp your favorite jelly/jam/preserve

Instructions

  1. Line two baking cookie sheets with parchment paper or silpats
  2. Small dice the butter and put it into the mixing bowl.
  3. Place it in a mixing bowl with the sugar and mix until creamy.
  4. Add the peanut butter and mix until combined.
  5. Beat in the egg.
  6. Slowly add the flour combined with baking powder and mix until the dough forms a ball.
  7. Divide the dough in 30 small balls. Place them on baking sheets, gently pressing with a fork.
  8. Chill the cookies for about 30 minutes in the fridge.
  9. Meanwhile heat the oven to 350F.
  10. Bake the cookies in preheated oven for about 12 minutes. Leave them to cool completely on the baking sheets before sandwiching them.
  11. Enjoy!

    I just had a duh moment! Why had I never thought of this before? What a great idea. I love peanut butter and jelly's with raspberry preserves. For years all my hubby would eat for lunch was a PB&J. His coworkers knew exactly what his lunch box held every. single. day. A PB&J, twinkie, and dorito's. Not healthy even in the slightest bit but that's what he wanted and I wasn't going to argue with that!

    This is such a cute idea! I actually never liked pb&j sandwiches as a kid - I always had peanut butter and honey! But I would definitely take raspberry jam over grape.

    Congrats for finally discovering PB&J. I'm not a grape fan either, but I do love strawberry and raspberry with my peanut butter. I'll bet Hubby and Dudette would join me in finishing off a batch of those cookies. They look delicious!

    I love cheese and preserves, too, but I have to admit that even though I don't make a habit of seeking out peanut butter and jelly, when I do have it, I really like it. I bet your cookies are even better. How could they not?

    gasp! pbj sandwiches are my FAVORITE!!! another delicious sandwich is honey and peanut butter! sometimes i used to put a mashed banana with honey and peanut butter. i can go on and on about it. when i was in spain, i remember the first thing i did was go to the store and look for some peanut butter hahaha especially since i got so sick of eating ham and cheese sandwiches!

    Oh, these cute cookies are a PB&J lovers dream! I haven't had grape jelly since I moved to Mexico. But I'm sure strawberry jelly would be just as delicious as the raspberry. :) My hubby had never tasted peanut butter until we got married, 3 years after he arrived in the U.S. For him it was love at first bite. Now whenever we luck upon a big jar of peanut butter down here, he's the first one to reach for it. :)

    PB & J has always been my favorite combo. :) I remember visiting my auntie and cousins and they would ask what I wanted to eat. "PBJ" was always my answer. They didn't even know what that was... I saw this photo the other day when my other half and I were out gallivanting and he wrinkled his nose. He is still at the point you were when you weren't impressed. In fact if he eats something that has peanut butter in it, his response is quite theatrical. The Farreley Brothers may cast him in a movie if he keeps trying things with peanut butter! Your photo is so beautiful and appealing he agreed to try these when I make them! As IF there would be any left after I ate them. :) Have a good day my friend!
