I’ve made these peanut butter and chocolate chip bars a couple of weeks ago, just before we left to visit my mother in low. She has a sweet tooth, just like me, and I knew these bars would be perfect to nibble on at her house.

They are soft and tender, a little chewy, somewhere in the middle between blondies and cake bars.

The brown sugar adds not only flavor but moisture as well while the vanilla yogurt keeps these bars moist longer. You could use plain yogurt and if you do so, you may wanna add about a teaspoon of vanilla extract.

Ingredients

  • 1/2 cup butter, room temperature
  • 1 cup brown sugar
  • 1/4 cup white granulated sugar
  • 2 eggs
  • 1 cup vanilla yogurt
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 cups peanut butter chips
  • 1 1/2 cups chocolate chips

Instructions

  1. Heat the oven to 350F. Line a 13X9" baking with parchment paper. Set aside.
  2. In a mixing bowl, with the paddle attachment on, cream the butter and sugars until light and fluffy, about 5-7 minutes.
  3. Add the eggs, one at a time, scraping the sides of the bowl with a spatula, if needed.
  4. Beat in the vanilla yogurt followed by the flour and baking powder.
  5. Turn the mixer off, and, with a spatula, fold in both the peanut butter chips and the chocolate chips.
  6. Spoon the batter into the prepared pan and bake in preheated oven for 30 minutes or until a toothpick inserted in the middle comes out clean.
  7. Remove from the oven and let cool completely before cutting into bars.

The recipe calls for 3 cups of chips (half peanut butter chips and half chocolate chips) If you're using only 1 1/2 cups the bars might turn out different

Wow is all I can say about these yummy bars ... I have my 3rd batch in the oven and I only found this recipe here a few weeks ago. I attend a Tuesday night trivia event every week and I've become the "baker" of the group, I always bring in a cake for our players birthdays and lately when we have no event to celebrate, I just bring a goodie. These have been requested for the 3rd time now, they are totally a hit and so easy to bake. I love that they are loaded with chips, but I've begun to add half a bag of caramel bits as well, they add an extra unexpected bit of flavor. Thank you so much for sharing this bar recipe ... they are a go to and one that my daughter has now requested that I write in to her special recipe book.

These look really good but Im a little confused with the recipe. You say there is 3 cups of peanut butter in them but there is no peanut butter listed in the ingredients, only one and a half cups of peanut butter chips and no indication of peanut butter in the directions.

Hi Beth, I apologize for the confusion. It's peanut butter chips and chocolate chips, and yes, combined that's 3 cups of chips. Half of them are peanut butter, the other half are chocolate. There's no actual peanut butter in the recipe, that's why is not listed. Just the chips.
