Tiffany has been playing sports since she was 4 and a half. For the last two years, she has been playing soccer both in the fall and spring.
I remember the first season. She cried every time someone passed the ball to her. If the coach called her name, she cried some more. Needless to say, we thought she’ll never do sports.
But she proved us wrong. She built confidence and return to the soccer field the following year and was fearless. She still is.
This winter, in between soccer season she wanted to do gymnastics. What it started as a 1 class (1 hour) a week way back in November, turned into two hours a week mid-February and for the last couple of weeks, she’s been practicing 9 hours a week! NINE!!!
And boy, does she eat after all the hard work at the gym!!
Although she’s not a picky eater, she gets easily bored with the same snacks and I’m always on the lookout for quick and easy, kid-friendly, snacks to keep her going.
This vanilla peanut butter dip is THAT snack! Not only does it come together in no time and it requires three ingredients, but it’s light and packed with protein, making it the perfect pre or post gym practice snack.
And since I can serve it with fresh fruit, veggie sticks (bell pepper is her favorite), pretzels, crackers, vanilla wafers and the list goes on, this may be the only snack she’ll never get bored with!
The three ingredients required to make this vanilla peanut butter dip are: greek yogurt, peanut butter, and International Delight Vanilla Creamer.
Greek yogurt and peanut butter are such a great source of protein.
I prefer Greek yogurt, unflavored, full fat but you can also use vanilla greek yogurt or non-fat if you prefer.
Although I use regular peanut butter in baking, when making this dip I love using natural peanut butter. Crunchy, but creamy will work just as well!
For the vanilla flavor, I reached for one of my favorite International Delight coffee creamer- French Vanilla! It’s sweet (no need to add sweetener to the dip), it’s creamy and has an incredible vanilla flavor!
You can probably use any International Delight coffee creamer in this vanilla peanut butter dip, but if you haven’t tried vanilla and peanut butter together you should give this combo a try!
For an extra punch of vanilla, I drizzled about 1 teaspoon of vanilla paste over my dip. This is optional, and mostly for the looks. The dip is amazing without the vanilla paste anyhow.

Ingredients
- 1 cup Greek yogurt ( I prefer full fat, but non fat works just as well)
- 1 cup natural peanut butter (I prefer crunchy)
- 1/4 to 1/3 cup International Delight French Vanilla coffee creamer.
Instructions
- In a mixing bowl add the yogurt, peanut butter and 1/4 cup coffee creamer.
- Stir until smooth and creamy, adding more coffee creamer until it reaches your desired consistency.
- For an extra vanilla punch, you can mix in about 1 teaspoon vanilla paste. - optional
- Spoon the dip into serving bowl and serve with fresh fruit, veggie sticks, pretzels and so on.
- Keep the dip in the fridge, in an airtight container, for up to 1 week.
