I’ve mentioned a couple of times my grandma in my posts and her joy to live and love for food but I rarely mention she’s fighting lung cancer and everytime I talk with her on the phone I pray I get to hear her voice at least one more time.

My parents worked a full time job when I was a baby. I was raised both by my grandma and my grandgrandmother. They were the ones I called mom, actually I still call my grandma Mom.

She loves both cake and fruit and this cake combines them. The blueberry cake is a simple cake, with everyday ingredients, no need for 10 trips to the store because you forgot something. I’m pretty sure you have already butter, sugar, eggs, flour, almonds, blueberries and lemons. Now all you need is a little bit of patience and a cup of coffee to enjoy the cake later with.

Despite being soaked in the lemon sugary syrup, the cake is still light, with a small crumb. The top of the cake has a strong lemon flavor and slowly it mellows down once you take a bite of the juicy blueberries.

Yields one 8X8" baking pan (16 squares)

Ingredients

    Blueberry lemon cake
  • 1 cup (226 grams) room temperature butter
  • 1 cup (200 grams) sugar
  • 4 eggs
  • grated zest and juice from one lemon
  • 1 3/4 cup (210 grams) all purpose flour
  • 2 tsp baking powder
  • 1/4 cup finely chopped almonds
  • 6 oz fresh blueberries
  • Lemon syrup
  • 2/3 cup sugar combined with juice from 2-3 lemons

Instructions

  1. Heat the oven to 350F. Line an 8X8" baking pan with parchment paper and set aside.
  2. In a mixing bowl cream the butter and sugar until light and fluffy, 2-3 minutes.
  3. Add the eggs and mix until well combined. Stir in the grated zest and juice from 1 lemon.
  4. Add the flour, baking powder and almonds and mix until just combined.
  5. With a spatula, fold in the blueberries.
  6. Pour the cake batter in the prepared pan and bake for 1 hour or until a toothpick inserted in the middle comes out clean.
  7. As soon as the cake comes out of the oven, prick it al over with a wooden skewer or a fork and pour over the lemon syrup. (2/3 cup sugar combined with juice from 2-3 lemons)
  8. Let the cake stand for a couple of hours or overnight before cutting into squares.
  9. Sift powder sugar on top before servings, optional.

When my friend Kim asked me to join her today to raise awareness about cancer I knew I have to oblige.

Today’s event is being hosted by Kim of Cravings of a Lunatic and Jen of Juanita’s Cocina. They teamed up with their blogger friends to help raise awareness and support for Cancer and Hospice today in memory of Kim’s dad. We encourage everyone to read the posts and share their own experiences with cancer. We also would like to encourage everyone to donate to the Canadian Cancer Society, the American Cancer Society and also to the Canadian Hospice Palliative Care Association. Hospice was a key element during Kim’s father’s battle with cancer. They made it possible for Kim to care for him at home. So please show your support and donate if you can. You can also contact your local Hospice and donate directly to them if you wish. A little goes a long way!

    I salute you and everyone raising awareness to cancer and a cure of this vile disease. My husband lost his battle almost 24 years ago when he was 42. Much too young.     Thank you for doing this post and giveaway to raise awareness for Cancer. I lost my dear grandpa to cancer over 10 years ago when I was a young college student. Not a day goes by that I don't miss him and think of him. It was so hard to watch him suffer from this nasty disease. I hope a cure is found soon!
