Summer vacation may and may not be a mom’s favorite time of the year. It’s a decision that most likely changes every day. But what doesn’t changes is the joy of an upcoming family trip. The months of waiting, the weeks of planning, the days of packing. The research, the reservations, more research. Shopping for new comfortable walking shoes (don’t tell me I’m the only one!).
Ahh, the anticipation!
It’s fun, exciting but it’s so exhausting in the same time.
This summer I’m living out of my suitcase for almost 7 weeks! That’s a lot of planning, pre-plannig and pre-pre-pre planning. With little over 4 weeks spent outside US, I have to pack and be prepared for everything. Rain or shine. Beach and mountain. Day and night.
And since I’m traveling with a 5 year old I need double of everything! And I may still need to buy supplies once I get to my destination. (I don’t know about you, but no matter how much I pack, I never have enough antibacterial wipes/ointment and bandages). Just thinking about it makes me tired.
That’s when coffee comes to the rescue!
And not just any coffee. Frozen chocolate coffee delight! Comes together in less than 10 minutes! And only 5 ingredients if we count the scoop of ice-cream on top.
Ingredients
- 1/4 cup chocolate fudge sauce
1 cup International Delight Mocha Iced Coffee - 1/2 cup heavy cream
- 2 cups ice
- 1/4 cup chocolate fudge sauce
- 2 scoops of ice-cream
Directions
Place 2 empty cups of the freezer. When ready to enjoy your coffee take them out and drizzle 1/4 cup chocolate sauce on the bottom and the sides of the cold cups.
Add iced coffee, heavy cream, 1/4 cup caramel sauce and ice to a blender. Blend until smooth.
Pour the frozen coffee drink into the cups.
Add a scoop of chocolate on top and drizzle more chocolate fudge sauce.
