Banana sheet cake with cream cheese frosting – moist and sweet from the mashed bananas with a little tangyness from the cream cheese frosting
When life gives me overripe bananas, I make a banana sheet cake with cream cheese icing. That was pretty much my motto over the weekend.
I woke up early as usual and decided to surprise my family with a freshly baked treat just in time for breakfast. While sipping on my cup of coffee and waiting for the cake to cool down I remembered my early days of baking.
No, I haven’t been baking since pre-school or kindergarten. Not even from high school or college. My first baking adventures started few years ago while expecting our first child. I remembered how big our kitchen seemed to me before stuffing every square inch with candy, pretty cupcake liners, bags of flour and sugar.
The kitchen was just for reheating coffee. For dinner, we had four choices: microwave, home delivery, take out or dine in. The day I decided to bake something I actually had to go out and buy a baking pan. We had only plates and a couple of saucepans. Slowly I started to feel more comfortable in the kitchen.
It didn’t feel new anymore, although we had it for a couple of years.
But that was me …. almost 4 years ago.
This banana cake is just perfect for parties. It’s easy to put together, bakes in no time and if you’re in a hurry like I was you add the frosting while it still slightly warm and watch how it slowly starts to melt and run down the sides. Quickly grab a fork and dig in. Nothing goes to waste.

Okay, so as a kid, we used to go to this weirdo grocery store sometimes and they had this banana sheet cake that I literally died over. It was so good! Later, as an adult, I revisited the grocery store to buy this supposedly-amazing cake and realized it tasted so.. artificial and gross. So I’ve been on the hunt for an amazing banana sheet cake to replace my memories, and this definitely looks like the one. So perfect, Roxana!

Who woulda thought YOU haven’t baked your whole life! Well, it proves that you can become a wonderful baker with lots of practice. One of favorite cakes is banana sheet cake with cream cheese frosting except I add cinnamon to the frosting and it gives it a whole new taste!
Bananas are always ready and ripe here to bake into something. Usually it’s for muffins or a bread. So nice to see a luscious banana cake recipe idea to try!

Banana cake? Ooh. I’ve never had that! I love banana bread so I have no idea why I haven’t tried it in cake form. And loving the sheet cake thing. Layer cakes are… annoying, to put it nicely. 🙂

Thanks for the recipe! I love banana cake. For those looking for a review, the cake is very good – it is very sweet and moist. I made a second version with only 1/2 cup of brown sugar, omitting the 1 cup white sugar – it was much shorter and cooked sooner, but still tasty and moist. The frosting is very runny, so be prepared for mess – but some people like it that way. It is more of a sauce or glaze than a frosting, and is also very sweet. I will make the cake again for sure – doubling the recipe! I would reduce the sugar and omit the frosting out of personal preference – but it was very good as printed. I plan to cover it with peanut m&ms tomorrow for my son’s birthday. 🙂
We made this as an extra cake for my Mom’s 90th birthday. It was a hit. Everyone loved it!!
